So, we are so tired of all of the same meals that I make all the time. My husband is so tired of Taco salad and taco soup and Alfredo with noodles. So, I decided a while ago to make a post about it. I am going to find one new meal to make each week for a month. I could do at least 2 meals a week but I don't want to pressure myself too much. I will then post the recipe on here and tell you how it went each week. I challenge any of you to try this out for you and your family. I know the first meal I found and made my family LOVED it! I am already behind on posting this because I found my first recipe two weeks ago.
So.......WEEK # 1......
White Chicken Chili
Melt 1/2 stick butter
Add 1/4 c. flour
Make a paste.
Add:
3/4 c. chicken broth
2 cups milk
Stir together to make a thick white sauce. Then add:
11/2 tsp. chili powder ( I use only 1 tsp. because I don't like it too spicy.)
1 tsp. ground cumin
1/2 tsp. pepper
2(4-oz.) cans of diced green chilies
chicken breasts cooked and shredded( sometimes I use canned chicken)
3 cans navy beans or white northern beans
1 can of corn( If desired)
Don't drain liquids out of cans. Heat all ingredients together. If desired, top with shredded cheese, tomatoes, & sour cream.
WEEK # 2
Chicken Taco Pasta
I know the name is a little weird...but try it before you judge it.
3 chicken breasts, cooked and cubed( i used canned chicken)
1 can of black beans rinsed and drained
1 can corn drained
1 can diced chilie's
1 packet taco seasoning
1/2 cup salsa
4 oz. cream cheese ( I would have liked more. Maybe 6oz.)
1 packet of hidden valley ranch dressing mix
1 can olives, sliced
6 oz. of cooked penne pasta
shredded cheddar cheese for topping
Cook pasta til done. While pasta is cooking simmer everything else in a large pan until well combined. Add pasta when it's done and bake in a 13x9 casserole dish at 350 for 15-20 minutes. Add the cheese when it's done or if you like it melted put it on a few minutes before is is done in the oven. Scrumdiddly!

Andrew's conversations....
Andrew and I had our first real conversation the other day. We were in his room and his window was open. He could hear some sirens from a fire truck and he stops and I said oh the fire truck is going to help people who might have a owie. He repeated the exact thing I said. I said uh huh. Cool huh? He said ya. (my brother in law Rob is a firefighter and I said ya, Rob goes and helps people too. He said oh when they have owie's? I said yup. And Heavenly Father watches over them and helps them too. He said Heavenly Father has owie's? I just laughed and said no......Heavenly Father helps them. He kept repeating and asking questions about it for the next 30 minutes. He was so into the whole thing. It was the cutest thing ever! Andrew is growing up so fast and is learning so much everyday!
When he was a baby I used to try and imagine what it would be like when he could have conversations with me and well......here it starts! I LOVE it! I do. Sometimes I just want him to be quiet for just one minute but most of all...I love it. It's so fun!

Evan is home from his mission!!!

Isaac's 6 month check up
First off I just have to tell what Dr.Wilcox said when he walked in to see Isaac sitting on the table playing with a toy. He walks in and looked shocked and said" I can't believe what i'm seeing right now". I said "what"? He said I am shocked that Isaac is sitting up so perfectly all by himself on that table at 6 months old"! I was like really isn't that normal? He said " no, most kids this age are still falling over and or wabbely". I was excited he said that! Both my boys have learned how to sit up by themselves at 6 months. I don't know what it is...the bumbo chair maybe? Anyways here are his stats..........
Weight: 16.31lbs( A little small but still good)
%tile: 20.99
Head: %tile- 13.88(pretty small head but I rather he have a small head than big)
Length: 27.5 inches
%tile: 77.95!! ( He is one TALL baby if you ask me) I don't know where he got that from! :)
